We celebrated Elijah's first birthday November 22 (yes on Thanksgiving). Grandma, Grandpa, Nana, Papaw, Uncle Andy and Uncle Ehric were here to celebrate. I had planned on making a milk free soy free cake using a recipe I found on the internet. It used shortening instead of some other ingrediants. I looked at the ingrediants on the shortening--it is basically all soybeans!! So much for a soy free cake. So all I could figure out to have was Jello. Elijah didn't mind. These rest of us just didn't get any cake.
After Turkey, and stuffing, and pumpkin pie and all the other good stuff, jello was just fine :) He was so excited when we sang Happy Birthday!
